Just off the grill! Fiesta Lime Chicken with a fresh Avocado Salsa that’ll kick your taste buds into high gear!
Ingredients
4 boneless, skinless chicken breasts
Juice of 2 limes
1 tablespoon olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon salt
1 ripe avocado, diced
1 small red onion, finely chopped
1 jalapeno, seeded and minced
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Instructions
In a bowl, whisk together lime juice, olive oil, chili powder, cumin, garlic powder, and salt.
Place chicken breasts in a large resealable bag and pour marinade over them. Seal and refrigerate for at least 1 hour.
Preheat grill to medium-high heat.
Grill chicken for 6-7 minutes on each side or until fully cooked.
In a separate bowl, combine diced avocado, red onion, jalapeno, and cilantro. Season with salt and pepper.
Serve grilled chicken topped with avocado salsa.
